- 1 stick butter or margarine
- 2 cups finely crushed chocolate-creme filled sandwich cookie crumbs
- 2 Tbsp Chocolate Mint Fireside Instant Coffee
- 1 8 oz package cream cheese, softened
- 1 14oz can sweetened condensed milk
- 2 eggs
- 1 Tbsp peppermint flavoring
- 1 package of chocolate mint candies, chopped
- 1 cup semisweet chocolate chips
- 1 teaspoon Chocolate Mint Fireside Coffee

Preheat oven to 325. Mix cookie crumbs and Fireside Coffee thoroughly. In 13×9 inch baking pan, melt margarine in the oven. Sprinkle the cookie crumbs and coffee mix evenly over margarine and pack into the bottom of the pan. Bake for 6 minutes and let cool.In medium bowl, beat cream cheese until fluffy. Gradually beat in sweetened condensed milk until fluffy. Add eggs and peppermint flavoring and mix well. Pour over cooled crust. Bake 30 minutes or until set. Cool completely.
Melt chocolate chips in microwave and stir in the teaspoon of Fireside Coffee. Drizzle over top of cheesecake bars. Sprinkle the chopped mint candy on top. Cut into bars. Store covered in refrigerator.
